Fiery Pineapple

With the weather getting warmer it won't be too long before a family BBQ, and this pineapple dish is a perfect side
This is refreshing, sweet and spicy, making it ideal with grilled meats or veggies. With only three ingredients this takes 5 minutes to put together but will have people talking all night!

This recipe requires only three ingredients: pineapple, chilli and mint
Dried chilli's are fine if you don't have fresh but make sure you get fresh mint; the leftovers can always go in the Pimms! When buying pineapple I like to get one that's a little yellow on the top and bottom as that means it will be extra sweet.

Before you chop up the mint make sure to crush the leaves by rubbing them between your hands. It releases all the oils and makes the flavour much stronger.

This would be perfect with my smokey chicken  or could be enjoyed a simple snack for when the afternoon hunger hits. A small serving of 100g also only has around 50 calories in, so is a great alternative to really creamy coleslaws or bland potato salads for a family get together.

RECIPE
Serves around 6-8 as a side

Ingredients:
One small pineapple
A couple of sprigs of fresh mint
1 tsp chilli's (either dried or finely chopped if fresh)

Method:
Remove the top and bottom of the pineapple and cut away the hard skin.


Then quarter the pineapple and cut the core out of the middle, similar to if you were cutting up an apple
Then simple dice up the cored pineapple and place in a large bowl.
Rub the mint leaves between your hands to release the oils and roughly chop before mixing into the pineapple chunks.
Sprinkle in the chilli and give it a mix. The sweetness of the pineapple tends to act as a catalyst to the heat of the chilli so I would advise doing this slowly!


Serve right away and enjoy!
