Cauliflower rice is a trend I've wanted to try out for a while and tonight was the night.
Along with courgetti this a great way to try and eat more veggies and whilst fooling your brain into thinking it's eating carbs.
Disclaimer; Cauliflower rice does not taste like rice. It tastes like cauliflower. However, aside from being smothered in cheese, this is probably the best cauliflower I've ever had. It crisp, full of flavour and proper tasty.
You only really need a cauliflower for this, but I added in some cumin, chilli and parsley towards the end.
Cauliflower rice also only takes about 15 minutes to prepare, making it speedier than most rices.
If you have a food processor this will be a much easier operation, but if you had a knife and an extra five minutes then you've got all the equipment necessary.
By baking the cauliflower it doens't stink the place out and also changes the texture; it's not at all soggy and the flavour is quite nutty and delicious.
A serving (around a quarter of a cauliflower) only has about 30 calories in, so is a much lighter alternative to rice. This wasn't quite a filling as rice, obviously, but was delicious and i'll definitely be making it again.
RECIPE
Makes rice for one person
Ingredients:
1/4 cauliflower
1 tsp cumin
1 tsp dried chillis
A sprig of fresh parsley
Spray oil
Method:
Preheat oven to 180C
Peel off the outer leaves of cauliflower and cut it into quarters
Cut out the inner core and discard.
Break the florets up and chuck into a food processor along with the chilli and cumin.
Blitz until it resembles rice, this usually only takes a couple of seconds.
Tip onto a baking tray and spray a couple of times with oil.
Bake for around 12 minutes, shaking the tray a couple of times so that none gets burnt.
Once cooked mix in the chopped parsley.
Serve right away! I ate this with my red lentil dahl and it was beautiful.
