Summery Salsa

Similar to my Bruschetta recipe this is a super speedy dish that takes less than 10 minutes to make. Ideal for a summer bbq or a picnic this salsa always packs a punch.


The secret to making any raw dish is to choose the best ingredients. Make sure you're using vine tomatoes and fresh coriander.
When preparing the ingredients you want each aspect to be very finely chopped as it's important to get each flavour represented in a mouthful.

The onions should be as finely chopped as you can!
I only used around half a deseeded red chili for heat as my mother can't handle her spice too well, but feel free to add more if your guests have a higher tolerance.

You make this ahead as the flavours will only deepen by being in the fridge for a few hours.

RECIPE:
Makes a very large bowl, so serves around 8 people

Ingredients:
6 or 7 large vine tomatoes
1 white onion
A large bunch of fresh coriander
Half a red chili, deseeded.
1 tsp chopped garlic (around 2 cloves)
The juice of one lime
Sea salt and Pepper

Method:
Very finely chop the tomatoes.
Bruise the coriander by holding it in one hand and slapping it against the other. This releases much more fragrance than just by chopping and makes your kitchen smell amazing. Roughly chop the coriander and add it to the mixing bowl.
Dice the onion and chili as thinly as you can before mixing it in.
Squeeze the lime over your salsa and throw in a pinch of salt and pepper before giving a final mix and serving.

This salsa is perfect with my pitta chips as a sharing snack between friends on a summers evening!
